Chana Masala Wraps
These chana masala wraps are one of those meals that feel fresh and satisfying at the same time. Warm chickpeas cooked with ginger, garlic, tomato, and spices are tucked into a soft wrap with crisp greens, fresh cilantro, and a cool lime sauce.
They’re flavorful, filling, and easy to adapt to whatever is growing, in season, or already waiting in the refrigerator. Add cucumber for something cool and crisp, radish for a little bite, or a few pickled onions when you want an extra burst of brightness.
This recipe makes two wraps.
Ingredients
Chana Masala Filling
1 tablespoon ghee or oil
1½ cups cooked chickpeas
½ small onion or spring allium, sliced
1 teaspoon fresh ginger, grated
1 garlic clove, minced
1 small tomato, chopped
½ teaspoon cumin
½ teaspoon coriander
¼ teaspoon turmeric
¼ teaspoon garam masala
Black pepper, to taste
Salt, to taste
Squeeze of fresh lime
For the Wraps
2 tortillas or roti
Handful of spring mix or other greens
Fresh cilantro
Thinly sliced cucumber or radish, if desired
Lime Sauce
2 tablespoons yogurt or tahini
Squeeze of fresh lime
Pinch of salt
Splash of water
Directions
1. Begin with the aromatics
Heat the ghee or oil in a skillet over medium heat. Add the sliced onion or spring allium, grated ginger, and minced garlic.
Cook for 2–3 minutes, until softened and fragrant.
2. Bloom the spices
Add the cumin, coriander, turmeric, garam masala, and black pepper. Stir and cook for about 30 seconds, allowing the heat to wake up the spices and release their aroma.
3. Make the chana masala
Add the chopped tomato and a pinch of salt. Cook until the tomato begins to soften and break down.
Stir in the chickpeas and cook for 5–7 minutes. Lightly smash some of the chickpeas as they warm, leaving plenty whole for texture.
Finish with a squeeze of lime. Taste and adjust the salt as needed.
4. Mix the sauce
Combine the yogurt or tahini with a squeeze of lime, a pinch of salt, and a small splash of water. Stir until smooth and thin enough to drizzle.
5. Warm the wraps
Warm the tortillas or roti briefly in a dry skillet, just until soft and flexible.
6. Assemble
Layer each wrap with greens, chana masala, cilantro, cucumber or radish, and a drizzle of lime sauce. Roll tightly and enjoy while the filling is still warm.
